Master Sommelier George Miliotes will host a blind tasting of six wines in the relaxed atmosphere of Wine Bar George this Friday, July 20, from 2:30 to 4 p.m.

One of just 249 Master Sommeliers in the world, Miliotes plans to hold many similar wine-tastings at his new Disney Springs venture, the only Master Sommelier-led wine bar in Florida.

George Miliotes, Master Sommelier, Returns to Walt Disney World Resort with New Wine Bar

LAKE BUENA VISTA, Fla., - Master Sommelier George Miliotes will bring his renowned wine expertise to Disney Springs at Walt Disney World Resort when his new venture, Wine Bar George, opens May 19, 2018 at 5pm. On May 20th, normal hours begin 11am - 2am. Wine Bar George will be the only Master Sommelier-led wine bar in Florida.

Miliotes is no stranger to Walt Disney World Resort – he was part of the opening team of the California Grill restaurant at Disney’s Contemporary Resort and managed the venue from 1995 to 2002. While there, he created an award-winning wine list and one of the first “100 wines by the glass” lists in the country.

“Disney Springs is the perfect place to open a wine bar and share my passion with the world,” Miliotes said. “Having the opportunity to train and hire my own team while sharing my 40-plus years of knowledge is truly incredible, and I look forward to opening our doors soon.”

As one of only 249 worldwide industry professionals certified by the Court of Master Sommeliers, Miliotes will feature wines from acclaimed and well-known wineries as well as growing regions and wineries that are up-and-coming. The location will offer an unparalleled wine list including more than 130 selections by the ounce, glass and bottle.

“The wine list will feature more than 130 wines all served by the ounce, glass or bottle,” Miliotes said. “The list will include more than 40 varietals from regions around the world. We will use the Coravin, the Vinfinity system and wine on tap to ensure each wine is enjoyed to its fullest extent. Servers will adeptly pair a range of small plates, cheese and charcuterie, shareable entrees and dessert with each wine. If you are looking for an awesome $9 glass on tap or a few ounces of Château Margaux, we will have wines for you to enjoy.”

Guests will have the opportunity to explore endless food and wine pairings at Wine Bar George. Executive Chef Ron Rupert and Miliotes have worked closely to create a menu that will pair with the extensive wine list.

“Offerings will feature seasonally relevant items, and everything will be made in-house,” Rupert said. "I’ve worked jointly with George to develop a menu that represents both global and local cuisine.Guests will enjoy food that is familiar, yet new all at once.”

With a team hand-selected by Miliotes, guests can expect their experience to include wine education, which will be served up in an approachable and fun manner. Joining Miliotes as General Manager is George Vavalides who brings more than 30 years of experience in the restaurant industry including nearly 20 years with P.F. Chang’s. Jamie Irizarry will be part of Miliotes’ team as Restaurant Manager. Irizarry has more than 15 years in the industry working with restaurants such as Seasons 52, Eddie V’s and The Capital Grille. Robyn Cohen will join as Director of Beverage with 15 years of bartending experience including, most recently, at Flying Fish on Disney’s BoardWalk. Cohen and Miliotes worked jointly to develop the featured cocktails at Wine Bar George, all of which will include a grape-based spirit. In addition to the extensive wine list, the wine bar will offer a variety of cocktails, a selection of beer and cider and frosé.


The 200-seat wine bar will join a growing and remarkable group of dining, shopping and entertainment offerings at Disney Springs. The design for the 6,000-square-foot space will be similar to a winemaker’s home estate with a welcoming, comfortable atmosphere. Wine Bar George Menu Preview

Wine Bar George, a 200-seat wine bar scheduled to open at Disney Springs The Landing neighborhood this spring, recently previewed some of its menu items on the Disney Parks Blog.

Wine Bar George will offer more than 130 selections by the ounce, glass, and bottle in a range of varietals, vintages, and prices. The venue is overseen by George Miliotes, renown wine expert, native Floridian, and Disney alum. Miliotes is a Master Sommelier -- one of only 249 in the world -- and Wine Bar George is the only wine bar in Florida owned by a Master Sommelier.

Executive Chef Ron Rupert will be responsible for the culinary side of Wine Bar George. His philosophy in the kitchen is simple. He says, “I want to create delicious food that pairs well with wine. I pull flavors from around the world that are relevant -- that create memories.

The Big Board – a selection of six artisan cheeses and five crafted meats that serves two or more.

Grilled Octopus with Lemon Vinaigrette – light and refreshing salad with tender pieces of Spanish octopus (a result of grilling then chilling the octopus) with a touch of acidity from the lemon vinaigrette.

Rupert began his culinary career at Walt Disney World Resort in 1988. He was part of the opening team of California Grill at Disney’s Contemporary Resort, where he teamed with Miliotes and Chef Clifford Pleau. During his 14 years at Walt Disney World Resort, Rupert was also part of the opening teams at Jiko – The Cooking Place at Disney’s Animal Kingdom Lodge and Ariel’s at Disney’s Yacht and Beach Club Resorts. Rupert and Miliotes have worked closely to create a menu that will pair with a wine list of more than 130 selections by the ounce, glass and bottle.

Wine Bar George to Host DVC Member Events

Wine Bar George, one of the newest additions to Disney Springs and Florida’s only Master Sommelier-led wine bar, is hosting weekly wine tasting experiences and monthly wine dinners for Disney Vacation Club Members and special guests as part of Membership Magic.*

Presented on Tuesdays from 3:30-5 p.m., and designed to help as many as 30 people taste wine like a Master Sommelier, the weekly wine tasting experience includes samplings of six types of wines from well-known and also up-and-coming wineries. Each week features a different collection of wines paired with a sampling of cheese and charcuterie. The cost of $45 a person (maximum of six people in a party) includes tax and gratuity.

The monthly wine dinners, meanwhile, accommodate as many as 10 people on select Wednesday evenings from 6-8 p.m., and are hosted by George Miliotes and, when available, a featured winemaker. This monthly experience, which includes a reception and three-course dinner with wine pairings, is priced at $115 a person, inclusive of tax and gratuity.

Located in The Landing neighborhood of Disney Springs near The BOATHOUSE and Morimoto Asia, the two-story, 6,000-square-foot, 210-seat Wine Bar George is the vision of Master Sommelier George Miliotes, regarded as one of the restaurant industry’s foremost wine experts. Miliotes developed his skills and reputation in part at Disney’s Contemporary Resort, where he opened California Grill and managed the venue from 1995-2002.

Wine Bar George draws design inspiration from a winemaker’s home estate and features more than 100 wines available by the bottle and glass, along with a selection of small plates, cheese and charcuterie boards, family style plates and desserts.

Miliotes is widely regarded as one of the restaurant industry’s foremost wine experts with accolades and awards from national publications including Wine Spectator. Miliotes is no stranger to Walt Disney World Resort – he was part of the opening team of California Grill at Disney’s Contemporary Resort and managed the venue from 1995 to 2002. While there, he met and worked alongside Ron Rupert, who will serve as the Executive Chef for Wine Bar George.
