Walt Disney World Swan and Dolphin Food and Wine Classic Introduces Grand Tasting Experience

LAKE BUENA VISTA, Fla. – July 12, 2017 – For the first time in its eight years, the Walt Disney World Swan and Dolphin Food and Wine Classic will offer a grand tasting experience led by a master sommelier. The tasting will feature wines from the Italian regions of Barolo and Barbaresco and highlight the unique Nebbiolo grape of northern Italy.

Leading the experience will be Master Sommelier Matthew Citriglia, one of only 149 master sommeliers in the Americas. He will guide the tasting like a tour through Piedmont showcasing several rare vintages from the region. As an intimate experience, tickets will be extremely limited.

Citriglia is the director of education for Southern Glazer’s Wine and Spirits and among the longest-tenured master sommeliers in Florida. He has served on the board of directors of the world-renowned organization since 2004. Citriglia mentors students pursuing master sommelier certification and has created training seminars to educate professionals in the food and beverage industry. He has more than 30 years of experience in the industry.

The grand tasting will join other seminar favorites returning to the event once again, including Wine Blending, Italian Wines, More than Malbec, Base to Bubbles, Beer Please, Craft Cocktails, Fine Art of Sushi and Sake, The Cheese Course, Pasta Making and back by popular demand after a several year hiatus, Riesling, So Sweet & So Dry.

LAKE BUENA VISTA, Fla. – Mar. 28, 2017 – The Walt Disney World Swan and Dolphin Food & Wine Classic will return for its eighth year Friday, October 27, and Saturday, October 28, with exciting new dishes debuting alongside returning festival favorites. Highlights of the 2017 menu include featured items from the hotel’s signature restaurants: Kobe beef mini burgers with truffle aioli, Applewood smoked bacon and roma tomato chutney from The Fountain; seared Yellowfin Tuna salad from Todd English’s bluezoo; ricotta gnocchi with wild mushrooms, baby spinach and fennel sausage from Il Mulino Trattoria and oven-roasted beef ribeye with mashed potatoes and sauce bordelaise from Shula’s Steakhouse. Returning dishes include the popular dragon sushi roll from Kimonos and fish ‘n’ chips with sea salt and vinegar potato chips from Garden Grove.

Highlights of the 2016 menu include: an American wagyu beef slider with avocado-bacon aioli and Applewood smoked bacon on a toasted brioche from the Fountain; a salt-roasted prime New York strip loin served with mashed potatoes and sauce bordelaise from Shula’s Steak House and seared striped bass with fall artichokes, Nicoise olives in a Spanish caper emulsion from Garden Grove. New Seminars and Innovative Dishes Highlight Fourth Annual Walt Disney World Swan and Dolphin Food and Wine Classic

LAKE BUENA VISTA, Fla.-- The culinary team at the Walt Disney World Swan and Dolphin Hotel is gearing up for the annual Walt Disney World Swan and Dolphin Food & Wine Classic, Oct. 18 - 19.

Back for its fourth year, the event presents the perfect opportunity for everyone -- from novices to enthusiasts -- to savor the flavor of culinary innovation at this two-night outdoor evening festival hosted along the Walt Disney World Swan and Dolphin Hotel's lush causeway.

Guests can enjoy the delights of numerous food and wine stations; immerse themselves in food and wine education seminars; meet the masters behind the culinary magic and take in some live entertainment at the same time.

From a short rib Oscar, marrying beef, Maryland blue crab, asparagus and hollandaise; to a Chinese-inspired vegetarian bao; to a handcrafted convergence of bacon, black-eyed pea puree and maple, the food options are as innovative as they are enticing. Finishing touches like raspberry s'mores and a milk chocolate mousse dome with a center of caramel cream and hazelnut dacquoise sponge cake, provide even more intrigue.

In addition to sampling all things savory and sweet, guests will be able to purchase featured wines on site and other event merchandise.

New to the educational lineup is a pasta-making seminar hosted by hotel executive chef Robert Ciborowski. Guests will learn to make pasta dough from scratch and assist with the creation of specialty pastas. The wine education tract will feature a new Italian wine class, where guests will learn the history of Italian wine and its influence on culture and cuisine. Returning beverage seminars include modern mixology, sake, beer, wine-blending, champagne, Riesling and Spanish wines. The seminars are led by the hotel's certified culinary and beverage experts.

LAKE BUENA VISTA, Fla. - August 18, 2010 - The Walt Disney World Swan and Dolphin Hotel is offering guests a chance to indulge at the first annual Food & Wine Classic at the Walt Disney World Swan and Dolphin Oct. 8 and 9.

Each evening will feature beverage seminars and a culinary festival with live music and tastings from the hotel's award-winning restaurants and lounges.

Guests have the opportunity to choose from six hands-on beverage classes taught by certified wine sommeliers and beer and cocktail specialists from the hotel's team. Attendees will learn about their topic of choice - ranging from a wine-blending seminar to a sake hour - through watching, listening, touching and of course, tasting!

Immediately following the lessons, guests can wander the causeway while being serenaded by live musicians and savoring numerous tasty offerings. The food samplings will include "Steamrollers," a creative take on molecular cuisine, from celebrity chef venue Todd English's bluezoo; "Pick Your Own Filet" from Shula's Steak House; a simple yet flavorful hand-crafted pasta from Il Mulino New York Trattoria and more. Each day of the event will feature a different selection of food.

Beverage stations will offer mini-learning experiences and feature offerings such as wine, sake, beer and cocktails using liquid nitrogen. Finally, guests can delight in a selection of desserts from the only two-time World Pastry Champion, Laurent Branlard, the hotel's executive pastry chef.
