Three-Day Celebration of Piemonte, Italy Comes to Four Seasons Resort Orlando

fourseasons-italy1.jpg

Calling all Italian food lovers: when bringing together an Italian-born chef, an Italian restaurant, and visiting chefs from Italy cooking with special imported Italian ingredients, the result is sure to be an event that is not to be missed.

This October, Executive Chef Fabrizio Schenardi, who hails from Torino, Italy, will bring Italian guest chefs in partnership from the Italian Food Style Education (IFSE) Culinary School in Italy to prepare an Italian culinary extravaganza. Ravello at Four Seasons Resort Orlando at Walt Disney World Resort will be host to several events highlighting the Piemonte region of Italy, which the Italian American Heritage Foundation has declared the “Region of Honor” for 2016.

In April 2015, Chef Schenardi was presented with the Paolo Bertani Award for his Italian culinary achievements by the Italian Academy of Cuisine and IFSE. During a trip to Italy this summer, Chef Schenardi was able to discuss collaborating with IFSE and Raffaele Trovato, the school’s director. “I’m very excited to bring the IFSE professionals to Ravello and have our guests and local residents take part in a truly authentic Italian experience,” says Schenardi. “Raffaele Trovoto is one of the most highly regarded instructors and mentors, and I am looking forward to having him bring his talents to Four Seasons Resort Orlando.”

The three-day event will include Trovoto and other IFSE members, and will begin with a welcome tasting of imported Italian extra virgin olive oils with housemade breads, a decadent appetiser buffet, and wine tasting. Day two consists of a five-course Italian feast in Ravello and a dessert party in Capa; and a pop-up Italian Market will be offered Thursday through Sunday, to feature imported olive oils, wines, and housemade Italian pastries and desserts, from Chef Fabrizio's bomboloni and biscotti to his housemade limocello and gelato. Visitors to the Italian Market can purchase these delicacies to-go, or can purchase and enjoy on property. A special Italian coffee lounge will feature delicious lattes, cappuccinos and more, to be enjoyed on the gorgeous outdoor terrace. Complimentary classes will also be offered to Resort guests and to the public.

CAPA RESTAURANT AT FOUR SEASONS RESORT ORLANDO TO FEATURE SPECIAL JAPANESE WAGYU BEEF

four-seasons-wagyu.jpg
Capa steakhouse to offer a “From Matsusaka With Love” special for Valentine’s Day weekend
Japanese beef, known as wagyu, is famed for its soft, buttery texture, high marbling ratio and superior taste. For steak lovers, it’s often attested that there is no better steak experience than wagyu. In February 2016, for the first time in history, Matsusaka beef, the ultimate within the Japanese beef industry, will be directly imported from the Matsusaka Region of Mie Prefecture, Japan and introduced at Capa restaurant at Four Seasons Resort Orlando at Walt Disney World Resort.

Matsusaka beef from Mie Prefecture has been recognised and honoured with the highest rankings for decades in the Japanese beef market. Four Seasons Resort Orlando Executive Sous Chef Sam Faggetti travelled to Japan in March 2015 to learn about Matsusaka beef. Later this January, Stephen Wancha, Director of Food and Beverage for Four Seasons Resort Orlando, will travel to Japan as well.

“We strive to offer a variety of exceptional meats on the menu at Capa, and our wood burning grill gives our steaks an amazing flavour profile,” says Faggetti. “It has been a privilege to travel to Japan to learn more about the care and preparation of the Matsusaka beef, and we are honoured to offer this special tasting at Capa.”

For six evenings, February 10 to 15, 2016, the Matsusaka beef will be on the menu at Capa in a special tasting called “From Matsusaka with Love.” The tasting menu is offered for USD 250 per couple, with an optional wine pairing available for USD 75 per person.

The Matsusaka Beef Tasting for Two includes:

Trio of wood grilled special grade Matsusaka beef: 3-ounce strip loin, tenderloin and ribeye

Served with side dishes of patatas bravas, blistered pimientos, roasted asparagus and truffle aioli

Trio of steak sauces: rioja, peppercorn and verde

four-seasons-capa1.jpg

By definition, Matsusaka beef cattle can only be virgin female cows of the Japanese black wagyu variety that have spent the majority of their lifespan, up until the time of slaughter, in Matsusaka City and its surrounding area and are registered under the Matsusaka Beef Identification and Management System. Some cattle farmers provide beer to cows to stimulate their appetites and give them thorough massages to improve blood circulation and encourage even fat distribution. Many farms raise their cows in individual rooms so they can be finely managed and assure a comfortable, stress-free life for their cows. Matsusaka beef producers spare no effort to produce the highest quality, richest, most finely dispersed marbling possible while managing their cows on a day to day basis. The rich marbling results in an exquisite taste.

Reservations to experience the Matsusaka Beef Tasting for Two at Capa can be made by calling 407 313 6161.

Course Design
Originally built in 1992 and designed by Tom Fazio as Disney's Osprey Ridge, Fazio re-designed the course for its launch as Tranquilo Golf Club. Enhancements included creating a completely new hole and renovated bunkers, plus improved visibility and airflow by enhancing the landscape design, in addition to a fully renovated clubhouse. The course is a Par 71, with a yardage of 6,901 and four sets of tees to accommodate all skill levels.

"I am very proud of the transformation of the Tranquilo Golf Club golf course. Since the course opened over 20 years ago, it has been considered among the best courses in the region, and the recent upgrades and improvements to the course will surely solidify that reputation for many years to come," said Tom Fazio of Fazio Golf Design.

four-seasons-golf3.jpg

Charlie Kent, director of golf for Tranquilo Golf Club and a member of the PGA of America since 1993, brings more than 25 years' experience in golf course management. He notes, "The Osprey Ridge course was so well-regarded by golfers for many years. We are very proud of the renovation work and enhancements the Fazio team completed and we're confident golfers who were fond of the former layout will truly be able to connect with the course once again."

The course is certified by the Audubon Cooperative Sanctuary program for golf by the National Audubon Society, and just received its re-certification this past September under the leadership of Rusty Wilson, golf course superintendent and Golf Course Superintendents Association of America member. The addition of native plants and trees, as well as the creation of naturalized areas on the golf course to provide water and food for local and migratory wildlife, was a key factor in the course's certification.

As part of the enhancements, all of the greens were resurfaced with Tiff Eagle Bermuda grass, in addition to improvements to drainage in many key areas of the course. To accommodate the development of Four Seasons Resort Orlando, Fazio created a new par three 16th hole, which Kent describes as one of the signature holes. This beautiful spot on the course is framed by Southern Live Oak trees and a natural sand area that runs from the tee area to the green. Measuring 163 yards from the back tee, it presents a scoring opportunity for the golfer, as Kent notes golfers will be more challenged by the 17th and 18th finishing holes. The 18th hole, a finishing Par 3, offers 217 yards fronted by a large bunker and a pond to the left. With the stunning backdrop of Four Seasons Resort Orlando in the distance, this hole presents a memorable completion to the round.

Tranquilo Golf Club Highlights
The course is available for individual tee times, available up to 60 days in advance for registered resort guests, and is open to the public for tee times 30 days in advance. Guests of Tranquilo can enjoy the full-service clubhouse, featuring locker rooms, and a Golf Shop featuring a variety of retail offerings. From a full line of logo wear and accessories, ranging from hats to jackets and even leather logo iPad cases, the Golf Shop is open daily from 7 am to 6 pm. Complimentary shoe shine and bag storage is also available at the clubhouse.

Tranquilo offers custom Four Seasons golf carts that include a state-of-the-art GPS navigation system with two-way communication, a ball washer, and coolers stocked with bottled water.

Family play is encouraged, and the course offers special golf carts that accommodate a family of four. In addition, children 12 and younger play free with an adult, and children ages 13-18 golf at half price.

Plancha
Plancha is the Cuban American restaurant located at the golf clubhouse. Helmed by Chef Pedro Sanchez Negron, who brings 16 years' experience and a strong background in Latin/ Caribbean/Spanish cuisine, Plancha offers a true delight for the culinary senses. The flavorful menu includes dishes such as empanadas, a smoked bacon and black bean soup, "La Plancha" burger with chorizo, maduro and smoked gouda cheese, "El Cubano" sandwich, churrasco flat iron steak, marinated chicken, and much more. Dessert is not to be missed at Plancha, with specialties such as the "Tres Leches" with coconut; traditional flan; and the coconut banana torta.

Frank Reilly, restaurant manager, brings nine years of food and beverage management experience to Plancha, which is open daily from 10 am to 6 pm. Plancha features a full bar plus a cigar bar, with an expansive lakeside terrace and outdoor smoking lounge area perfect to enjoy an "après golf" cigar. Capa Restaurant at the Four Seasons Orlando
Authentic Spanish Cuisine in a Modern, Sophisticated Setting

The highly anticipated Capa restaurant officially opened its doors at Four Seasons Resort Orlando at Walt Disney World Resort on October 20, 2014, providing Resort guests and local Floridians a new, sophisticated dining option rich in flavour and ambiance. Decorated in a striking palette of black, grey and crimson, the 17th level rooftop restaurant is a stylish venue destined to be Orlando's most sought after culinary hotspot. The menu and setting of Capa is inspired by the Basque culture, an area of northwest Spain and southwest France. Capa Bar and Capa Restaurant are open exclusively during the evening for bar and dinner service.

Designed by Puccini Group of San Francisco, Capa is an elegant space with high ceilings and an open kitchen concept that provides warmth and lends a great ambiance. Capa Bar offers a vibrant setting with a spacious terrace and a focal point of a mural made of antique Spanish coins. Dark wood finishes lead the way into Capa Restaurant, a 122-seat space with a wall of windows. A stunning, vibrant red art installation by artist Peter Genetenaar of the Netherlands flows above across the entire ceiling. Black banquettes and intimate tables set the stage for an upscale dining experience.

fso_capa_kitchen.jpg

An expansive terrace outside Capa restaurant features an additional 31 seats - what some may say are the best seats in town. Terrace diners enjoy a serene view of the abundant woodlands, the lakeside setting with natural wetlands, the Tranquilo Golf Club greens, and views of all four of the Walt Disney World Resort parks. Terrace diners may be able to enjoy setback views of the Wishes Nighttime Spectacular at Magic Kingdom Park, as well as the IllumiNations: Reflections of Earth show at Epcot. The productions typically occur nightly.

"This is the most scintillating restaurant in all of Orlando," Stephen Wancha, Director of Food and Beverage for the Resort, unabashedly gushes. "The design of the space is absolutely phenomenal - true to Spain's heritage yet with a modern edge. With the terrace overlooking the Walt Disney World Resort area, offering the most incredible views, there's no doubt about it - Capa is the ultimate dining destination for any occasion."

At the helm of Capa's kitchen is Capa Chef Tim Dacey, a Florida native and graduate of Florida State University who is excited to be back in the Sunshine State. Dacey arrived to Four Seasons Resort Orlando by way of Reynard restaurant in Brooklyn, New York, where he served as sous chef. Previously, Dacey was chef tournant at The Setai in Manhattan, New York. His experience also includes serving as chef de partie at The NoMad in Manhattan, which was awarded one Michelin star. Dacey also served two years as the chef de partie at Chicago restaurant Mercat a la Planxa, a tapas restaurant, working directly with acclaimed Latin chef Jose Garces. Additionally, Dacey's culinary background includes serving as chef de partie at Spiaggia restaurant in Chicago, a one Michelin star and a James Beard Award winner. Before honing his skills at these swanky city spots, Dacey started out working with Four Seasons Resort Orlando Executive Chef Fabrizio Schenardi, when the two cooked alongside each other at Pelagia Trattoria in Tampa, Florida in 2004. Schenardi was delighted to bring Dacey back to Florida for the celebrated opening of Capa.

"It's a true honour to have experienced Tim's evolution in his culinary career," notes Schenardi, who oversees the culinary program of the Resort's five on-property restaurants. "His culinary talent has really intensified over the past 10 years while cooking at some of our nation's finest restaurants. I'm definitely proud to have Tim's talent and culinary passion representing Capa. Guests are in for a real treat!"

Overseeing the pastry element of Capa is Executive Pastry Chef Rabii Saber. Saber brings ample resort pastry experience to Four Seasons Resort Orlando, including serving as Executive Pastry Chef at Four Seasons Resort Lanai, Hawaii. In addition to his tenure in Hawaii, Saber served as executive pastry chef at the Ritz Carlton Bahrain, as well as the Greenbrier Hotel and Resort in West Virginia. One of the signature desserts on the menu will be churros, accompanied by chocolate and caramel dipping sauces.

Restaurant General Manager Josh Loving Aaronson joined Capa from Four Seasons Hotel San Francisco, where he served as Restaurant Manager for MKT restaurant. Aaronson is a true "foodie" and even spent two weeks in Spain this past May, studying the Basque culture and cuisine and gaining inspiration for specific menu concepts and presentations for Capa. Fluent in Spanish, Aaronson also is a certified sommelier and the Resort's Wine Director.

The cuisine at Capa is inspired by authentic Spanish offerings, often with a modern twist. At Capa Bar, small tapas style plates are featured. Crudos include a selection of oysters and hamachi. Embutidos include a cured sausage, created in the Resort's own butcher shop; both Capa and the Resort's Italian restaurant Ravello feature a charcuterie program. A cheese plate includes Spanish cheeses Cana de Cabra, Garroxta, La Peral and Manchego. Additional para picar small plates include huevos deviled eggs with vadouvan and espelette; croquetas ham with guindilla pepper; olivas wood roasted olives; caracoles escargot with chorizo, tomato and fennel; and cerdo pork belly with apple butter and marcona almond.

At Capa restaurant, oysters and a Chef's Seafood Tasting are available, as well as the charcuterie program including Jamon de Bellota, a pure Iberico acorn fed ham. A cheeseboard and charcuterie board featuring Spanish cheeses are available, plus numerous breads, olives, prawns, anchovies and more. The raciones are slightly larger plates including octopus, fluke, king crab, veal cheeks, beets with goat curd, cauliflower with caper and egg, and radish with smoked yogurt and pomegranate. The main courses at Capa include a seafood selection of snapper or halibut; a paella dish with calasparra rice, mussels, clams, chicken, chorizo and peas; and an assortment of prime meats, including an 8 oz prime filet, a 12 oz bone-in filet, a 12 oz 30 day dry aged NY strip, a 16 oz 40 day dry aged bone-in rib-eye, and a 32 oz porterhouse for two. The meats are expertly grilled on Capa's wood-burning grill over American white oak, a wood traditionally used in Spanish wine barrels that lends a unique flavour to the meat. A variety of salsas are served to accompany the portions, including a jerez sherry reduction, a rioja red wine sauce, and a verde with cilantro, chives and parsley.

Little ones have their own children's menu, including the staple of mac & cheese, and additional options including roasted chicken breast and a petite filet mignon. Children's entrees are served with choice of steamed vegetables or french fries.

Capa will offer a variety of Spanish-influenced cocktails designed by James Beard-nominated barman Joe Cleveland. Cleveland gained notoriety working alongside chef Jose Andres at Minibar in Washington, DC and most recently, Cleveland joined forces with celebrity chef Michael Chiarello in the opening of his San Francisco Spanish flagship restaurant, Coqueta. The In Spanish Fashion is made with Rittenhouse rye, gold dust, and ice cubes made of vermouth, and is served in a glass that has been smoke-infused over a piece of American white oak. Another, the Leche Frita, includes Licor43, clementine-infused anejo and smoked pineapple. The signature Capa GinTonic features Carounn gin, Fever-Tree Mediterranean tonic and striking botanicals of green apple, key lime, juniper berries and edible marigolds. Finally, a delicious cocktail inspired by the setting of Capa, the Magic Mojito, features minted rum, kiwi, and lime fairy floss (cotton candy).

With three sommeliers on staff, including Aaronson, Capa offers more than 50 selections of Spanish wine, including the traditional txakoli, a slightly sparkling, dry wine. Additionally, two signature wines under the Iconoclast label, introduced in 2012 exclusively for Four Seasons Hotels and Resorts are on the wine list: a cabernet sauvignon from the Stags Leap District in Napa Valley and a chardonnay from the Russian River Valley. Made for Four Seasons by the Terlato Family Estates, Iconoclast wines are a Four Seasons signature, available by the bottle or by the glass. The remainder of the 300 bottle list features a broad selection of regional gems and international classics. Additionally, drawing from their strong relationships with Napa Valley producers, Wancha and Aaronson crafted one of the finest collections of California cabernet sauvignon, from iconic producers to cult favourites.

Capa offers two visually appealing private dining rooms that each seat up to 35 guests. Two custom pre fixe menus are available for private dining at Capa. Private dining inquiries can be directed to Robbie Wilcox, private dining room sales manager.

Capa Bar is open from 5:00 to 11:00 pm and Capa restaurant is open from 6:00 to 10:00 pm seven days a week. Visit OpenTable for reservations and become a fan of Capa's Facebook page for the latest news and events.

Four Seasons breaks ground at Walt Disney World Resort

Four-Seasons-groundbreaking.jpg

LAKE BUENA VISTA, Fla., Dec. 6, 2011 - Four Seasons Hotels and Resorts kicked off construction of its luxury resort at Walt Disney World Resort today, in a groundbreaking ceremony with joint venture partners Silverstein Properties and Dune Real Estate. The 444-room resort will create about 2,000 construction jobs and hundreds of resort positions when open.

"Travelers around the world know and trust Four Seasons, and Walt Disney World is the world's premiere family vacation destination," said Meg Crofton, president, Walt Disney Parks and Resorts Operations U.S. and France. "Together, our two companies offer a brand-new reason to visit and experience Central Florida."

With an opening anticipated in 2014, Four Seasons Resort Orlando at Walt Disney World Resort will feature several dining venues including a rooftop restaurant with views of Magic Kingdom Park; a 14,000 square foot spa; fitness center; three pools and a "lazy river"; sports and recreational facilities; as well as meeting and event space, and a business center.

Kathleen Taylor, President and CEO of Four Seasons Hotels and Resorts, spoke of the relationship with Disney: "Each of us is dedicated to creating a product of the highest quality and standards, something that will become a landmark here in Orlando and a destination unto itself for travelers from all over the world. It is truly a one-of-a-kind project and Central Florida will be a valuable addition to our family of resorts, particularly since this is a destination our guests already enjoy."

The development will encompass the existing Tom Fazio-designed Osprey Ridge 18-hole championship golf course, which will be renovated and subsequently managed by Four Seasons. The first Four Seasons in Central Florida is located within the Golden Oak residential community, created and master-planned by Disney.

Four Seasons first acquired the land from Walt Disney World in 2008 and is working closely with New York-based Silverstein Properties and Dune Real Estate Partners to develop the new resort.

Larry Silverstein, president and CEO of Silverstein Properties, recalled making the decision to back the project. "At the end of the day, it became apparent that the concept was right; that the team superb; the location first class; and the two names - Four Seasons and Disney - as good as you can get," he said. "The best."

Four Seasons is dedicated to perfecting the travel experience through continual innovation and the highest standards of hospitality, with 85 properties in 35 countries, and more than 50 projects under development.

Silverstein Properties, Inc. is a privately held, full-service real estate development, investment and management firm based in New York.
