The Contemporary Resort’s popular restaurant, California Grill, closed yesterday for an extensive refurbishment.
The Disney Parks Blog recently released renderings of what the new California Grill dining room and onstage kitchen will look like when it opens later this summer.
Designed by the Puccini Group in San Francisco, the restaurant will feature a wall of wines at the entrance and will showcase the spectacular views of the Magic Kingdom below.
Chef Brian Piasecki has already begun working on the restaurant’s new menu. According to the Disney Parks Blog, the menu will have updated versions of some of the restaurant’s classics, like the beloved pork and polenta. This dish will become “Pork Two Ways” — wood-fired tenderloin with goat cheese polenta, and braised lacquered pork belly with country applesauce.
The Parks Blog also revealed a new 24-hour braised beef short rib with truffle whipped potatoes, vol-au-vent (puff pastry) with roasted vegetables and natural jus.
As previously announced, sushi chef Yoshie is retiring, but the new sushi chefs will continue her legacy with such creative new tastes as Sea Urchin Nigiri with mamanori (soybean paper), salmon roe and freshly grated wasabi root.
